    This Easter brunch recipe requires you to have some brioche, eggs, Gruyere cheese and prosciutto. It is tasty and does not take a lot of time to prepare.

    Ingredients

    • Six Brioche slices each with a thickness of one inch

    • A quarter cup of lightly packed parsley leaves

    • Kosher salt

    • Twelve thin slices of prosciutto

    • Two tablespoons of unsalted butter and softened butter ideal for brushing

    • Two thinly sliced scallions

    • Six large eggs

    • Three cups of frisee that is torn into bite-size pieces

    • A half pound of thinly sliced Gruyere cheese

    • Two tablespoons of fresh lemon juice

    • Freshly ground pepper

    • Two tablespoons of extra-virgin olive oil

    Preparation

    First, preheat your boiler and simultaneously brush both sides of your brioche slices with the softened butter. Arrange the brushed slices in a single layer on your rimmed baking sheet. Broil your brioche for two minutes maintaining them eight inches away from the heat and ensure that you turn them once allowing them to toast lightly. Mix your parsley, scallions, olive oil, frisee, and lemon juice and season them with pepper and salt in a medium bowl.

    Proceed to melt a tablespoon of butter into each of your two large nonstick skillets and crack three eggs into every skillet. Your eggs should be cooked with the sunny side up using moderate heat. Ensure that the white part of your eggs is firm and the yolks runny for approximately five minutes. Remove your eggs from the broiler and season them with salt and pepper on a plate.

    Make sure that as much of your toasts as possible is covered with Gruyere cheese. Broil your meal for three minutes while maintaining it at eight inches away from the heat allowing all the cheese to melt. Transfer your cheesy brioche toasts to plates and cover them with the fried eggs, frisee salad, and prosciutto and serve them immediately.
